Short answer: not worth risking your life ;)
During my search for practical uses for our large crop of yellow dock weed, I ran across a few posts where people were eating bull thistle. This is a weed that perhaps causes me the most anxiety and at times makes me angry at my neighbors for not taking the fight against this armed and dangerous predator as seriously as I believe they should. The kids know which weed I'm going after when, in the heat of summer, I head out in the heaviest clothing I can find wearing full leather gloves and carrying commercial sized trash bags. Like an executioner, I will solemnly walk up to the towering, 4-6 foot thistle and put the trash bag over her, read her last rights and tell her to warn her friends about floating their little, thistle seeds towards Devotion (we won't put up with their spiky ways). Then I let her wilt and wither for a few days before I hack her down, dig her up by the roots and haul her away. "Yeah, let that be a lesson to ya!"
And because I did promise some sort of treat and the thistle was not that, I am off to to make chef Michael Young's tray bakes with the kids. And tray bakes ARE super yummy ;).
